Look at their eyes. Some people die with their eyes open or closed or half-way. It takes strength and muscle to close the eyes. Anyway, if the eyelids are not flashing, it may be a sign of death, but the other sign is more common physiological breathing. This is called Cheyne-Stokes equations, which means they are breathing fast amt for a while and then they slow down or even appear to be more if they stopped breathing for several seconds. That means death is very close (almost on the same day). Also look at their skin color. They have poor circulation, so they will look is pale, ash, or mottling of the skin (what your skin is like when you're cold).

The only other thing I would add to answer TropiGal is that people typically develop difficulty breathing and a sound called "rattle". They are too weak to clear the throat, and there is a rumbling, husky breath when they are. difficulty breathing is a very telling tale sign, and usually means that death is near.
